Sweet Grilled Winter Chicken

Think you can’t grill in the winter? Think again. And I’m not talking about the George Foreman Grill. I’m talking about indoor grilling on your stove top using a cast iron grill. There are many to choose from.  They are easy to use and easy to clean. Here is a quick marinade recipe that you can whip up quickly in your Vitamix blender. (the perfect gift for yourself!) Here is this simple and yummy recipe.

Sweet Grilled Winter Chicken

Marinade Ingredients

  • 1 Orange – peeled
  • 2 T Mango Chutney or any type fruit preserves (jelly)
  • 5 cloves garlic – yes!
  • 1 t Salt  (more or less to your taste is fine)
  • 1/2 t Pepper
  • 1/2 t Curry powder
  • 1 t Garlic powder
  • 2 T Olive Oil

Marinading Instructions

Put all ingredients into your blender (Vitamix blenders whip this up in about 15 seconds). Blend on high until smooth. Pour into glass or plastic container. Add chicken.  I used Thin sliced chicken breasts. You could also use tenderloins. Stab chicken with fork to let marinade soak in. Marinade in fridge for 1 hour or over night is fine too.

Grilling Instructions

Preheat your oven to 350 degrees F. Set aside a lightly oiled sheet pan which can hold all your chicken.  On your indoor grill, (this is the one I use) turn the heat up to med high/high. Once the grill is hot, place the marinaded chicken onto the grill and cook on each side until nicely browned. Each side will take around 3-4 minutes depending on how how the grill is. You may need to use your stove vent, but you might not. It shouldn’t be very smoky, mostly steamy.

Once browned, remove chicken from the grill and place on the sheet pan you prepared. If you’re doing a lot of chicken you can start to grill your next batch. Once all your chicken is on the oiled pan, place this in your preheated oven for 15 minutes. (By finishing the cooking in the oven you will ensure that the chicken both cooks all the way through and stays moist. I learned this from Chef T who really knows his stuff!) Remove chicken from oven. Let sit for 5 minutes and then you can serve.

You can also freeze some of this chicken in single serving sizes. You’ll have a healthy go-to food that you can heat up anytime. Having lean protein handy is very helpful for dieting and losing belly fat.

Clean Up Instructions

Cleaning your cast iron grill is super easy. Place it in the sink and spray it with very hot water. Do not use soap. Use a stiff brush to clean off any food. If you have any burnt on food, let it soak for a bit then use your metal spatula and/or the stiff brush to remove food debris. Once cleaned, immediately towel dry the grill. And then lightly oil the grill. I use my hands to spread the oil and then dab up any excess with a paper towel.
