My Aunt Bridie and Uncle Frank from Galway, Ireland introduced me to the chopped salad this spring. I’ve always loved salad and never thought that a salad could be so delicious and magical, so boy was I surprised when I ate their chopped salad.

Here’s the most exciting part: a chopped salad delivers far more nutrition than a regular salad. The reason is by chopping it you make more of the nutrients available for your body to absorb. When we chew salad we do a woeful job of actually tearing it apart enough to glean all the nutritional benefits.

The other reason why this chopped salad is more nutritious is because of the big variety of greens, sulphur based, and colorful veggies you’ll be getting which is right in line with the highly regarded advice by Dr. Terry Wahls on how to eat for your health.

Bottom line: yes, I do recommend buying a VitaMix 5200 blender. I bought mine 2 years ago. and I use it almost everyday! Why? Because:

Too Busy for Climate Change?

You don’t have to save the world single handed. It’s not an all or nothing proposition for each individual. It’s simply about doing the best you can in any given day. What I’m doing today is spreading the word for Blog Action Day 2009: Climate Change.

As Monika Baurlein states today in MotherJones.com, “Fix the Climate or the Kid Gets It.” (Clever title!) We need to convince “Americans that something we care about is actually at risk here. And of course something is is. Climate change poses the greatest danger not to polar bears, not to glaciers or beaches, but to our kids.”
